Instructions
Make the Crust
Place the flour, salt, sugar and chilled shortening or vegan butter in a food processor. Pulse in short bursts until it resembles a coarse meal.
Then with food processor running, add just enough cold water to create a soft dough. Start with two tablespoons and then add more if you need it. You want the dough to come together but not be too sticky.
To make dough by hand, use a pastry cutter or forks to cut the coconut oil into flour and then add water and mix together.
Roll into a ball and wrap. Chill dough in fridge for an hour.
Assemble the Cobbler
Preheat oven to 350° F.
Combine peaches, lemon juice and sugar together in a bowl. Toss together so the slices are coated in sugar and set aside to allow it to form a syrup.
When it's ready, add flour, coconut oil, vanilla, cinnamon, salt, and nutmeg. Stir everything together.
Spray baking dish and add peaches in bottom of casserole dish.
Roll out dough after chilling into a 10 inch square. Use a pastry cutter or knife to cut dough into strips. (I like to trim the rough edges to make a square before cutting my strips.)
Lay cut strips of pie crust over top of peaches in one direction.
Pull back every other strip and lay one strip starting in the center going in the other direction. Repeat with alternating strips and continue to cover top making a basket weave on top.
Brush the top with coconut oil or vegan egg wash and sprinkle with cinnamon sugar mixture.
Bake in a 350° F oven for 50-55 minutes or until peaches are tender and the crust is golden brown.
Notes
Make the crust first. That way it can sit in the fridge while you prep the peaches.If you chill the crust longer than an hour or it feels too hard to roll out, let it sit on the counter for 5-10 minutes before rolling.Your cobbler is done when the syrup appears thick under the crust and the top is lightly browned.Serve warm peach cobbler with a scoop of vegan vanilla ice cream or whipped cream.
