Soy Garlic Tofu
Great topping for salads or to add to vegetables and rice for a quick meal.

- ¼ cup reduced sodium soy sauce
- 1 T honey or brown sugar
- 2 garlic cloves minced
- 1 T rice vinegar
- 1 tsp sesame oil
- ½ - 1 tsp sriracha depending on preferred spiciness
- Salt and pepper to taste
- 1 package extra-firm tofu
Preheat oven to 400 degrees.
Place the tofu in between paper towels and place something heavy on top to weight it down for about five minutes. While the tofu is pressing, mix together the remaining ingredients in a small bowl.
Cut the tofu into small pieces, ½“ cubes or smaller. Pour the marinade over the tofu and allow to sit for about 15 minutes.
Spray a baking sheet with cooking spray. Remove the tofu from the marinade, straining off most of the juice. Place it on the baking sheet in a single layer.
Place into the oven and cook for 20-25 minutes until heated and slightly dried.
