Looking for an easy snack to satisfy your craving in between meals? These 4-ingredient Peanut Butter Balls aka energy bites with oats and dark chocolate chips are lightly sweet and packed with protein, fat and carbohydrates.
Place the peanut butter and oats in a food processor and pulse until well blended. If mixture seems too dry or thick, add one tablespoon of water at a time until it loosens up.
Add the hemp seeds and dark chocolate chips and pulse a few times to incorporate.
Use a small cookie scoop or tablespoon to portion out the mixture into balls. Place on a cookie sheet and roll with your hands to shape. Let the balls chill for at least 30 minutes in the fridge.
Transfer to an airtight container and store in the refrigerator for up to one week.
