These vegan date brownies are EVERYTHING you want a brownie to be!! These fudgy brownies are simply delicious! Each bite is filled with rich chocolate flavor, moist texture, and just enough sweetness. Believe it or not, these brownies are gluten-free, vegan, and contain minimal processed sugar!
Place the dates into a medium bowl. Add about 1 cup boiling water or enough to completely cover the dates. Let sit for 1 hour to soften dates.

Preheat the oven to 350° F.
After soaking, use a slotted spoon to transfer the dates to a blender, adding soaking liquid to the blender as needed for the dates to puree . Blend on high until smooth.

Add the tofu to the date mixture in the blender to puree the tofu and mix with the dates.
½ cup silken tofu
Combine the flour, oil, vanilla extract, cacao powder, baking powder and salt in a medium mixing bowl. Add the contents of the blender to the bowl and mix well with a wooden spoon.
½ cup gluten free flour, 2 tablespoons sunflower or canola oil, 1 teaspoon vanilla extract, ⅓ cup cacao powder, 1 teaspoon baking powder, ¼ teaspoon salt
Add the chocolate chips and pecans if desired.

Transfer to an oiled or sprayed 9 x 9 baking pan. Place into a preheated oven to cook for 20-25 minutes.
Notes
Soak the Dates. This will help them blend up better into a paste. You can soak overnight or in advance if you prefer. Learn more about soaking dates and making date paste in this resource on How to Make Date Paste.
Slowly Add Liquid to the Dates. Only add a little liquid at a time so you only add enough water to help the dates blend. Too much water may lead to soggy vegan date brownies.
Squeeze and Drain the Tofu: On my first try with this vegan date brownies recipe I skipped this step and I found the brownies more wet than moist.
Taste the Batter. This vegan date brownie recipe is definitely not as sweet as the traditional brownie so I recommend trying a bit of the batter before baking so you can adjust if you prefer.
Sweeter Vegan Date Brownie: Use chocolate chips with a lower cacao percentage or even vegan milk chocolate instead.
