Cooking roasted red peppers in the air fryer is the easiest way to make roasted peppers at home! They require very little effort and only ONE ingredient – red bell peppers.

Wash peppers, cut in half and remove core. Trim membrane and remove seeds from each half.
Place peppers in the air fryer basket cut side down.
Cook at 400° F for 20-25 minutes without preheating. Check them at 10 minutes and move bell pepper halves around especially if there are hot spots. Continue cooking them cut side down until tender and the skin is nicely blackened.
When ready, remove from air fryer and place in a bowl and cover with a lid or plastic wrap. Let them sit covered until cool enough to handle.
Use your fingers to peel off the skin from the outside of the peppers. You can also use a fork or small knife if it isn’t peeling easily.
Make sure to remove all the seeds and then use the roasted peppers in recipes.
Notes
Don’t over stuff the air fryer basket. A medium sized air fryer easily cooks two peppers at a time. If using a smaller air fryer or cooking a double batch, make sure the peppers have room between them during cooking so the hot air can circulate around them.Let the peppers sit covered after cooking. Covering traps the steam from the peppers inside the bowl while they are cooling. This loosens up the skin and makes it easier to peel off.Cover the roasted peppers with a bit of extra virgin olive oil to extend the shelf life to ten days in the fridge. Alternatively, you can freeze them for up to three months.This recipe makes about a half cup of roasted peppers but the amount may vary depending on the size of the peppers you cook.The same method will work with other color bell pepper including the yellow pepper and orange.The skin of the pepper should easily peel off after letting it sit but if doesn't you can use a knife to scrape it off.
