Avocado Lime Dressing with Tarragon (No Cilantro!)

Ingredients
1avocadocubed
1tablespoonlime juicefreshly squeezed
1 ½tablespoonfresh tarragonchopped
3tablespoonsred wine vinegar
1clovegarlicminced
1teaspoonagave or honey
Salt and pepper to taste
Instructions
Place all ingredients in a blender and blend until creamy. Add salt and pepper to taste with ¼ cup water and blend again.

Check consistency, if you prefer a thinner dressing, add water 1 tablespoon at a time until desired consistency is reached.
Notes
Use a ripe avocado for the creamiest texture—if it feels firm, it’s not ready.
Prefer a pourable dressing? Thin it slowly with water or extra lime juice.
Want some heat? Toss in jalapeño, chipotle, or hot sauce to spice things up.
Store leftovers in an airtight container and use within 1–2 days for best flavor.
Tarragon gives this dressing its unique flavor, but cilantro, parsley, or mint all work great too.
