Ingredients
Yogurt Dip
1medium cucumberpeeled, deseeded, and diced into small cubes (about 1 cup)
Cut the peeled and deseeded cucumber up into small diced pieces.

Combine the yogurt, garlic, cucumber, feta cheese, dill, oregano, and lemon juice in a small bowl. Stir to combine. Add salt and pepper to taste.
1 cup Greek yogurt, 2 cloves garlic, ¼ cup feta cheese, 1 teaspoon dried dill, 1 teaspoon dried oregano, 2 tablespoons fresh lemon juice, Salt and freshly ground pepper to taste
Make the Fritters
Preheat oven to 400 degrees F or 200 degrees C.
Place the grated zucchini in a cheesecloth and squeeze well to remove as much of the moisture as you can.
2 cups grated zucchini
Combine the zucchini, feta, garlic, green onion, mint, dill, egg, olive oil, flour, breadcrumbs, salt and pepper in a medium bowl. Mix well until moistened and the mixture forms a consistency you can form into a patty.
¼ cup feta cheese, 1 clove garlic, 2 green onions, 1 tablespoon fresh mint, 1 teaspoon dried dill, 1 egg, 1 tablespoon olive oil, ½ cup whole wheat flour, ½ cup breadcrumbs, ½ teaspoon salt, ¼ teaspoon black pepper
Use a small cookie scoop to measure out the mixture for fritters. Use your hands to shape them into a ball that is smooth and place them on a parchment paper lined baking sheet sprayed lightly with baking spray. Leave a small amount of space between each one. Press them down to form a thin patty, about ¼ - ½ inch high.
Bake in the preheated oven for 20-25 minutes, flipping over halfway through.
