Whether you are a cauliflower lover or someone looking for ways to get your family to eat more veggies, you’re going to love this delightful twist for a cauliflower side dish!
1large headcauliflowerabout 2.5-3 pounds, cut into small florets (about 2 pounds florets)
1tablespooncornstarchmixed with 1 tablespoon water
⅓cupchopped toasted walnuts

Instructions
Combine cottage cheese, cream cheese, yogurt, vegetable broth or milk, ½ cup cheddar cheese, garlic powder, thyme, nutmeg, salt and black pepper in a food processor. Blend until smooth
½ cup cottage cheese, 6 ounces cream cheese, ½ cup plain Greek yogurt, 1 cup vegetable broth or milk, 1 cup sharp Cheddar cheese, 1 teaspoon garlic powder, ½ teaspoon thyme, ¼ teaspoon nutmeg, ¼ teaspoon black pepper, 1 teaspoon salt
Spray the ceramic liner of your slow cooker with the cooking spray and add half the cauliflower. Add half of cheese and broth mixture. Repeat with remaining cauliflower and remaining cheese mixture.

Cook on high for 1 ½ - 2 hours or on low for 3 - 3.5 hours. Stir at least once halfway through. When almost done, add cornstarch and water mixture to crockpot and stir well. Cook for 15-30 minutes longer to allow sauce to thicken. Turn off heat and top with remaining cheddar cheese. Let it sit for 10-15 minutes and then serve topped with nuts and green onions.

Size of the cauliflower. The cooking time is based on smaller sized florets, about 1-inch in size. You can leave them in larger pieces but you will need to extend the cooking time.
Adjustable cooking time. You can decrease or extend the cooking time depending on the texture you prefer. For this type of recipe I like it better with softer cauliflower.
Stir at least once. The slow cooker cooks from the bottom so you definitely want to move the cauliflower around to make sure it cooks evenly.
