Ingredients
2poundspotatoessuch as white Russet potatoes or Yukon golds
Scrub the outside of the potatoes well with a scrub brush and water. Cut potatoes into ⅜ ” slices and then slice each of those into ⅜ “ wide pieces.
Preheat the oven to 425 degrees F about 10 minutes before you are ready to cook.
Season the Potatoes
Place the cleaned and cut potatoes in a bowl and drizzle with oil. Toss to distribute the oil and then add half the seasoning mixture. Use tongs or your hands to toss the potatoes around to distribute the oil and seasoning.
Spray a baking sheet with baking spray and lay out the fries in a single layer and sprinkle the top with the remaining seasoning.
Cook the Oven Baked Fries
Place into the preheated oven and cook 35-40 minutes. Rotate the tray and flip over the potatoes halfway through the cook time. In the last ten minutes of cooking, check the potatoes frequently and move them around as needed so that all the sides get browned.
Potatoes are done when they are tender and golden brown.
Notes
Cut evenly: Slice the fries the same size so they cook at the same rate. A mandoline makes the job quicker and more precise.
Dry well: After cutting, pat potatoes thoroughly with paper towels to remove extra moisture—this is key for crispiness.
Space out: Arrange fries in a single layer with room between each piece. Crowding leads to soggy fries.
Flip halfway: Turn fries during baking so they brown evenly on all sides.
