Easy Broccoli Cranberry Salad with Citrus Dressing

Ingredients
Ginger Orange Vinaigrette
¼cupfreshly squeezed orange juicejuice of about 1 orange
Combine the ingredients for the vinaigrette in a small jar and shake to combine. Taste and adjust flavors as desired.
Prep the Broccoli
Blanch the broccoli by quickly boiling it and then submerging it in ice cold water. When cool, drain it well.
Assemble the Salad
Combine the broccoli, oranges, cranberries and red onions together. Drizzle the dressing over the top and toss to combine. For best flavor, let the salad sit in the fridge for 20 minutes before serving.
Top with the toasted nuts and serve.

Cut the broccoli into even-sized bite-sized pieces. This makes it easier to eat but also they broccoli will cook more evenly.
Let it sit after mixing. It doesn't need long but letting it sit for a few minutes allows the broccoli to soak up the flavors of the citrus vinaigrette.
Cut mandarin oranges in half if they are rather large.
Use fresh ginger whenever possible for the best flavor.
