These chocolate peanut butter oatmeal balls are the ultimate no-bake snack! Made with just 4 simple ingredients, they’re sweet, salty, and packed with energy-boosting goodness. Perfect for lunchboxes, post-workout fuel, or a quick grab-and-go treat any time of day.
Place the peanut butter and oats in a food processor and pulse until well blended. If mixture seems too dry or thick, add one tablespoon of water at a time until it loosens up.
1 cup creamy peanut butter, 2 cups rolled oats
Add the hemp seeds and dark chocolate chips and pulse a few times to incorporate. Add salt and sweetener at this point too if you're using it.
2 tablespoons hemp seeds, ¼ cup dark chocolate chips, ¼ teaspoon salt, Sweetener such as dates or maple syrup
Use a small cookie scoop or tablespoon to portion out the mixture into balls. Place on a cookie sheet and roll with your hands to shape. Let the balls chill for at least 30 minutes in the fridge.
Transfer to an airtight container and store in the refrigerator for up to one week.
Notes
Switch up the nut butter: Try almond, cashew, or pistachio butter for a different flavor. Make them nut-free with sunflower seed butter.
Customize the mix-ins: Add cocoa powder, shredded coconut, or swap the chocolate chips for peanut butter or white chocolate chips. Just add a splash of water if the mixture gets too crumbly.
Peanut butter matters: Conventional brands mix easily and taste great; natural peanut butter may need a bit of sweetener, salt, or water.
Pulse gently: Use short bursts in the food processor to retain oat texture.
