Place all the ingredients into a blender or food processor except the pumpkin seeds. Blend until smooth. Add warm water to thin it out if it’s too thick.
½ cup pumpkin, 15 ounce can chickpeas, 1 clove garlic, 1 tablespoon lemon juice, 1 teaspoon rosemary, 1 teaspoon thyme, 2 tablespoons olive oil
Taste and adjust salt and pepper as needed. To serve, drizzle top with a bit of olive oil and top with pumpkin seeds.
