These Cookie Dough Bites are soft, chewy, and packed with chocolatey goodness. Made with simple ingredients and no baking required, they’re the perfect sweet treat. Whip up a batch today!
Preheat oven to 350°F/175C and line a baking tray with parchment.
Spread the oat flour in an even layer on the tray, and bake for 5-7 minutes until just toasted. Allow to cool.
¾ cup oat flour
Combine coconut oil, oat milk, brown sugar, and vanilla extract in a bowl. Whisk until everything is combined and well mixed.
3 tablespoons coconut oil, 5 tablespoons oat milk, ½ cup light brown sugar, 1 teaspoon vanilla extract
Add the almond flour, toasted oat flour, and salt. Stir until combined.

Add the mini chocolate chips if using. Fold until well combined.
⅓ cup mini dark chocolate chips
Cover and chill for at least 30 minutes to firm up.
Use an oiled melon baller or teaspoon to scoop heaping teaspoon-sized amounts and roll into balls. Place on a parchment lined tray. Once formed, freeze for at least 10 minutes.
Melt the Chocolate
Stove: Place chopped chocolate and 1 tablespoon of coconut oil in a heat proof bowl over a pot of simmering water until mostly melted. Remove from heat and stir until smooth.

Microwave: Alternatively, chop chocolate very fine and microwave with the coconut oil in short bursts of 10-15 seconds until starting to melt. Stir after each burst.
Dip the Cookie Dough Truffles
Using a fork (or two) dip each ball in the chocolate and turn until completely covered. Place back on the parchment and sprinkle a bit of salt on the truffle is desired. Allow to set completely, either at room temperature or in the freezer. Truffles with chocolate set at room temperature will be shinier and less prone to the chocolate discoloring (blooming).

For best freshness, store your cookie dough bites in the fridge for up to five days. If kept in a cool spot, they’re fine at room temperature for about 24 hours, but after that, it’s best to refrigerate them.
