Heat two cups of water to a low boil. Pour over hibiscus leaves and allow it to steep for five minutes. Set aside and allow it to cool completely.
Peel the prickly pear carefully and chop into cubes.
Place the fruit in a blender with the remaining two cups of water and lime juice. Blend until pureed. Place a fine mesh strainer over a bowl and strain the juice to remove any large pieces of seed.
Combine the cooled hibiscus tea and strained juice in a container. Taste and add sweetener as desired. Serve it up over ice with fresh mint and sliced fresh fruit.

If possible use ripe fresh fruits to make agua fresca! It tastes much fresher and the more ripe the fruit, the more natural sweetness of the fruit.Serve chilled or over ice cubes for the best flavor and most refreshing experience.Garnish with fresh mint, hibiscus tea leaves, and lime or lemon wedges.Be careful handling the fresh prickly pears. They do have small sharp spines on the outside that can get stuck in your hand.
