Instructions
Make the batter
Combine mashed sweet potatoes, milk, sugar, and vanilla extract in a bowl. Whisk together until smooth. Make sure to break up any large pieces of sweet potato before mixing with dry ingredients.
½ cup sweet potato, 1 ½ cups almond milk, 2 tablespoons sugar, 1 teaspoon vanilla extract
Add both flours, baking powder, cinnamon, and salt to another medium mixing bowl and whisk together. Add the dry ingredients to the wet mixture. Fold together with a spatula or wooden spoon just until mixed. The pancake batter will be thick but pourable. Let the batter sit for 10 minutes.
1 cup whole wheat flour, ½ cup all-purpose flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, ½ teaspoon salt
Cook pancakes
Heat a griddle or non-stick skillet over medium-low heat. Spray with baking spray and pour in pancakes using a ⅓ cup measure. Spread out gently with a spatula keeping the shape round. Cook until the edges are dry and bubbles begin to pop and not fill in. Gently flip over and cook the other side. This may be 2-4 four minutes for each side. Remove pancakes and keep warm. Repeat until all batter is used.

Notes
Cook Pancakes Slowly. Because of the sweet potato, these pancakes are naturally denser and take longer to cook than regular pancakes. You can flip the pancakes over once you see bubbles and the edges appear dry. Don't be surprised if they take 3-4 minutes on each side to cook.
Cook Pancakes On Low. Pancakes browning too quickly? Reduce the heat! This will help ensure they are cooked through and don’t get too dark on the outside.
Bake Your Sweet Potatoes. Roasting the sweet potatoes enhances their natural sweetness and doesn’t add water to the potatoes so they are more flavorful! It does take longer so if you need a quicker method, it's ok to boil them.
Keep Them Warm. Since these take a bit to cook, you can keep them warm in the oven so they stay nice and hot for serving. Just make sure to keep the oven as low as possible by using a warm setting or 200° F.
