Sweet & Tart Citrus Avocado Salad with Pomegranate Dressing
This colorful citrus avocado salad is packed with juicy oranges, tart grapefruit, creamy avocado, and crunchy pomegranate seeds—all tossed in a sweet-tangy homemade pomegranate dressing. 2cupscitrus fruit - any combination of fresh mandarin oranges, navel oranges or grapefruitpeeled and separated into segments

Instructions
Vinaigrette
Combine all the ingredients for dressing except olive oil together in a blender and mix. Then with the blender on, slowly add the oil. Taste and adjust seasoning as needed.
¼ cup extra virgin olive oil, ¼ cup pomegranate juice, 2 tablespoons red wine vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, Salt and freshly ground black pepper
Place the dressing in the refrigerator until ready to serve.
Salad
Add greens to a bowl and drizzle with a few spoonfuls of dressing. Toss with tongs to coat. .
8 cups mixed greens
Place in a platter or individual bowls, top with mandarin oranges, grapefruit, red onion, and sliced avocado.

Drizzle with remaining dressing and sprinkle each salad with pomegranate seeds.

Notes
Use 2–3 types of citrus for the best mix of flavor and color.
Supreme larger citrus (like oranges or grapefruit) to avoid bitter bites.
Chill the dressing before serving to let the flavors meld.
Toss greens with dressing just before serving to keep them crisp.
