Made with freshly squeezed lemons, crisp cucumbers, and cooling mint, it’s the perfect mix of tangy, juicy, and totally refreshing. Grab a glass, kick back, and let this lemonade do its thing. You deserve it!
Roll lemons on counter to release the juice. Cut in half and squeeze into a bowl. After all lemons are juiced, pour into a measuring cup, you want about a ½ cup. Juice more lemons if needed.
6-7 lemons
Place cucumber, lemon juice, mint leaves and agave in a blender and process until well juiced.
1 large cucumber, ¼ cup mint leaves, ¼ cup agave
Strain the liquid using a fine mesh strainer, pressing the juice from the solids and reserve the liquid.
Add water to the reserved liquid and taste. Add more lemon or sweetener if desired.
2 cups cold water
Pour over ice to serve. Garnish with mint leaf, lemon slices and fresh mint.

Notes
The flavor of freshly squeezed lemon juice is 100% worth the effort. Choose lemons in the market that have a little give when you squeeze them for maximum juiciness.
Serve it cold over lots of ice and maybe even serve it in a frozen glass!
Strain to remove solids. It’s ok if a few get through but you don’t want too much pulp in it.
Rolilng the lemons before cutting releases more juice from the lemons for more flavor. Another option is to use a spoon to release the juice in the lemon half. It's ok if you get a little pulp in there since we will be straining later.
For best flavor, cucumber lemonade is best enjoyed within 24 hours of mixing it. You can store it in the refrigerator for up to three days. It won't keep beyond that as the cucumber starts to break down and the lemonade takes on an off flavor.
