This cilantro lime brown rice is easy to make using the instant pot or you can follow the alternate instructions to cook on the stove. Lime and cilantro along with a little coconut milk add amazing flavor and texture to brown rice. This instant pot brown rice recipe is perfect to serve alongside tacos, fajitas or used as the base of a burrito bowl.

Pressurize and Depressurize Instant Pot 20 minutesminutes
Place brown rice, milk and water in the Instant Pot. Lock the lid in place.
Set the Instant Pot for 20 minutes on medium high pressure cooking. Make sure the pressure valve is in the closed position.
When the cooking time is up, let vent naturally for 10 minutes, use a towel or wooden spoon to release the pressure valve and then carefully remove the lid. Stir in cilantro and lime juice. Add salt and pepper to taste.

Increase the amount of liquid to 4 cups (3 cups of water and 1 cup coconut milk)
Place brown rice, milk and water in a saucepan and heat to a boil.
Once it reaches a boil, reduce heat, cover with a lid and simmer until rice is done and all liquid is absorbed. Watch it carefully after you cover it with the lid as the milk causes it to cook over easily. Add more water if needed.
When rice is cooked, stir in cilantro and the juice of one lime, and salt and pepper to taste.

Tips for Making Cilantro Lime Rice Instant Pot:Use fresh lime juice and add after the rice is cooked for the best flavor. Add more juice if you want more lime flavor.Don't let the rice continue to sit after the initial 10 minutes of natural release. While the lid is still in place the rice is technically still cooking a bit and you may end up with soft and mushy rice.If you decide to use white rice in place of the brown rice, be sure to also reduce the cooking time. Brown rice is more intact and requires a longer cooking time in order to come out fluffy and tender.
