A delicious and creamy rice side dish to serve on your next taco night or with a bowl of beans.

Ingredients
  • 1 cup brown rice
  • 1 cup of water
  • 1 cup of coconut milk
  • Juice of one lime
  • ¼ cup cilantro, finely chopped
  • Salt and pepper
Directions
  • Step 1 Place brown rice, milk and water in a saucepan and heat to a boil. Once it reaches a boil, reduce heat and simmer until rice is done and all liquid is absorbed. Watch it carefully after you cover it with the lid as the milk causes it to cook over easily. Add more water if needed. When rice is cooked, stir in cilantro and the juice of one lime, and salt and pepper to taste.
