You’re going to love these easy potato fritters made with mashed potatoes, cheddar cheese, and green onions! All you need are a few simple ingredients and about 20 minutes of active time to make a batch. This potato fritter recipe makes a great side dish or appetizer that’s sure to be a crowd pleaser.

Ingredients
1cupgreen onionsgreen and light green parts, chopped
3cupscold cooked mashed potatoesabout 2 pounds or 3-4 potatoes
Add mashed potatoes, green onions, eggs, flour, cheese, parsley, salt and pepper to bowl. Gently fold together until well blended.
Measure out 2 tablespoons of mixture and shape into patties. Place on prepared baking sheet. Bake 20 minutes, flipping over at least once halfway through cooking.
Serve with sour cream. Garnish with chopped green onions.

Salting Your Fritters. The recipe uses kosher salt and the amount of salt is for using plain mashed potatoes. Be sure to add a bit less if you are using leftover mashed potatoes that have already been salted.
The Cooking Pan. I found the potato patties cook better on a dark pan resulting in a nicer golden brown color. If you use a lighter colored pan you may need to extend the cooking time by 5-6 minutes.
Don’t Use Parchment Paper. It interferes with the tops and bottom of the patties developing color. Just be sure you spray the pan very well.
Any Sticking. If you find your potato fritters sticking a bit – especially the cheese, use a metal spatula to get under the patties and flip them over.
