1cupgreen onionsgreen and light green parts, chopped
3cupscold cooked mashed potatoesabout 2 pounds or 3-4 potatoes
Preheat oven to 400° F. Prepare a baking tray with cooking spray.
Cooking spray
Add mashed potatoes, green onions, eggs, flour, cheese, parsley, spices, salt and pepper to bowl. Gently fold together until well blended.
1 cup green onions, 3 cups cold cooked mashed potatoes, 2 large eggs, ¾ cup all-purpose flour, 1 ½ cups cheddar cheese, 1 teaspoon garlic powder, ½ teaspoon smoked paprika, 1 ½ teaspoon kosher salt, ½ teaspoon black pepper
Measure out 2 tablespoons of mixture and shape into patties. Place on prepared baking sheet. Bake 20 minutes, flipping over at least once halfway through cooking.
Serve with sour cream. Garnish with chopped green onions.
