A hearty start to the day, this oatmeal and yogurt parfait is creamy, swirled with a maple cinnamon flavor and topped with fresh fruit for a healthy breakfast.
Place yogurt and pureed fruit in a small bowl and stir to combine.
Mix together the oatmeal, vanilla, cinnamon and sweetener, if you’re using it.
Place a small layer of cooked oatmeal in the bottom of the jar(s). Top with the yogurt and fruit mixture. Repeat the entire layering process again with the remaining ingredients until you use everything up. End with a layer of yogurt. You should get 2 or 3 layers of each depending on the size of glass jar..
Top with fresh fruit and sprinkle the top with chopped almonds.
Notes
When making this yogurt parfait in advance, do not top it with the chopped almonds or granola until it’s ready to serve. Otherwise, the nuts will lose their crunch.
The smaller the jars, the more layers you can create when building the breakfast parfait.
Any fruit will work for the recipe, just make sure to chop it into small, bite-sized pieces.
