Ingredients
1poundsweet potatoes1-2 large, peeled and cut into wedges or thick slices
Preheat oven to 350 degrees F. Prepare baking sheet with parchment paper.
In a small bowl mix together oil, vinegar, miso garlic powder, and red pepper flakes.
1 ½ tablespoons olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon white miso, ½ teaspoon garlic powder, 1 pinch red pepper flakes
Place cut potatoes in a large bowl. Pour olive oil and vinegar mixture over potatoes and toss until coated.

Lay out potatoes in an even layer on your baking sheet. Brush some of remaining balsamic miso mixture on top of potatoes. Keep rest for brushing during cooking.
Place in oven and bake 20-25 minutes or until the potatoes are tender. Turn potatoes on the tray at least once halfway through cooking and brush with any marinade remaining in the bowl. I like to turn them every ten minutes until the potatoes are cooked.
Notes
Depending on the saltiness of the miso, you may not need to add additional salt.
