Creating umami flavors
Umami is the lesser known, fifth flavor along with sweet, salty, bitter and sour. The flavor of umami is savory and is most commonly associated with cooked meat and broths. But it’s possible to add umami flavor to vegetables and vegetarian dishes through the addition of various ingredients.
Umami is naturally found in broken down proteins. The strongest umami flavors come from meats and aged cheeses, but also from other ingredients such as miso, mushrooms, balsamic vinegar and garlic. In this dish you have an umami powerhouse with a marinade made with miso, balsamic vinegar and garlic marinated sweet potato wedges.
This recipe for balsamic miso sweet potatoes is super fast, requiring less than five minutes or so of hands-on time. But if you still want to get a bit ahead you can prep the marinade and sweet potatoes in advance.
For the balsamic miso marinade, mix together the five ingredients. Place them in a container cover with a secure lid and place in the refrigerator until you are ready to prepare. To prep the sweet potatoes ahead: place them in a container with a lid after cutting into wedges. Cover them with water so they don’t turn brown and put them in the refrigerator until you are ready to cook.
When you are ready to cook, dump the water off the sweet potatoes. Next dab them with some paper towels and toss them in the marinade. Finally, finish them by following the cooking instructions in the recipe.
Balsamic Miso Sweet Potato Wedges
- 1 pound sweet potatoes 1-2 large potatoes
- 1 T olive oil
- 1 T balsamic vinegar
- 1 T white miso
- 2 cloves garlic
- Salt to taste
- Freshly ground pepper to taste
- Preheat the oven to 400 degrees F.
- Peel potatoes if desired and cut into thick wedges. In a small bowl mix together oil, vinegar, miso and garlic together. Taste the marinade and add salt and pepper as desired.
- Pour this mixture over the potatoes and toss until coated.
- Lay out potatoes in an even layer on a lightly sprayed baking sheet.
- Place in oven and bake 20-25 minutes or until the potatoes are tender. Turn potatoes on the tray at varying intervals to brown all the sides.
