It’s all about the sauces or salsas for me!!!! They are quick and easy flavor boosters. Something to quickly add to a salad, veggie grain bowl or even my scrambled eggs in the morning. You can whip up one of two on a weekend day and then use them throughout the week to spice up or add flavor to your breakfast, lunch and dinner meals.
This fresh tomato salsa is better than any store-bought salsa on the market — at least in my book. I have searched high and low in grocery stores and specialty markets for a great tasting tomato salsa brand, but haven’t found one I truly love. I think that most store-bought brands are simply missing the freshness that I find in making my own. A lot of times it’s not just the flavor I don’t enjoy but also the texture.
What makes this fresh tomato salsa so easy is that it really contains ingredients you can find year around. Plus,if you have a food processor or blender it goes together quickly since you can just throw everything in it and blend it up. I have used both kitchen tools to make it and personally I like the food processor better. When using the blender, I often need to add a bit of water to get it to blend up well enough. Though that could be the quality of my blender. Plus I like to leave it a bit on the chunky side and my food processor gives me more control over the texture. But honestly, either one works so use what you have and prefer!!!
Fresh Tomato Salsa
- 4 roma tomatoes
- ½ white onion
- 1-2 jalapenos
- ½ bunch cilantro
- Juice of 1-2 limes
- Salt and pepper to taste
- Cut all the ingredients up into medium pieces and place into blender or processor.
- If you don’t want the salsa so spicy, be sure to remove the seeds and insides of the peppers. You can adjust all the ingredients depending on the flavors you enjoy.
- After processing the vegetables, taste and add salt and pepper to taste.
