Is your lunch rotation getting a bit stale?  I’ve got a bunch of my favorite take to work lunch recipes together in a collection for you.  These take to work lunch recipes are perfect to prep ahead, transport easily and quick to assemble or reheat when you are ready to eat!

Why is meal prep important?

For me, self-care is important for my overall sense of well-being. Often we think of health as only being our body, but it is so much more than that.  Our mental and emotional health also contribute greatly to how we feel each and every day.  Taking some time out to prep up meals that you enjoy, find satisfying and make you feel great is key to taking care of yourself and a huge part of intuitive eating.

This collection of lunch recipes has options for hot and cold meals that you can prep up and take on the go with you to work, school or where ever you spend your days.  And if you scroll down to the end, I give you five of my favorite sauces you use as mix and match for salads and lunch bowls.

Soups

Soups are great because you can make a batch ahead of time and freeze it.  That way you always have a meal to grab when time is tight and you didn’t get something prepped.

Taco Inspired Vegan Lentil Soup
Lentils are cooked with tomatoes, corn and taco seasoning to create a hearty, delicious and healthy soup.  The soup goes together in less than an hour and also works well to prepare ahead.

Aguadito de Verduras (Peruvian Green Soup with Vegetables)
This delicious, veggie packed soup has just a slight bit of spice from some peppers combined with cilantro and tons of lime juice. The result is a lovely bright flavor combined with tons of vegetables and legumes. Great to make ahead of time and freeze or store for use during the week.

Salads and grain bowls

These salads and grain bowls can be eaten hot or cold and if you want, simply change up the dressing for a little variety

Vegan Mediterranean Bulgur Bowl

Asian Salad Bowls
This recipe makes two totally different bowls or salads with two totally different flavors!!! You can prep these ahead in jars or containers to take on the go or to throw together a quick and easy dinner at the end of a busy day. Don’t be daunted by the ingredient list!! It’s actually pretty fast and you end up with four complete jars so either lunch for one for four days or two meals for two people.
